10 most memorable dishes in 2019

This year I have travelled more than ever. I have visited more restaurants than ever, and it has has been harder than ever before to choose my 10 most memorable dishes in 2019. But here they are – in random order.

Reindeer offal – sweetbread, tongue and marrow as well as cep, white currant and a pickled pine cone.

Peas and egg yolk at Azurmendi, Bilbao in Spain
Sea urchin with pickled parsley at Koks, Faroe Island
Sea urchin lasagne with spider crab at Sasha, Madrid in Spain

Turbot at Elkano, Getaria in Spain
